Grill using indirect heat - after preheating turn one burner OFF and
second burner to MEDIUM/HIGH. Place roast on grill, fat side up,
where burner is turned OFF. Cover. Grill 75-80 minutes or until meat
thermometer reads 150°.
Pork Loin Rib Roast (3-4 pounds)
Rub generously with spice rub or salt and pepper.
Sear all sides 2-3 minutes each on HIGH. Reduce heat to MEDIUM
continue cooking, uncovered, for 12-18 minutes, turn as needed or until
meat thermometer reads 150°.
Pork Tenderloin (1 pound)
Rub lightly with oil, follow with spice or herb
rub. Or, marinate for several hours. Drain
well before grilling.
Sear on HIGH 2 minutes per side. Reduce heat to MEDIUM/HIGH,
continue cooking, uncovered, for 7-9 minutes per side.
Hamburgers

PORK
Chops 1 to 1 1/2-inches thick
Rub generously with spice rub or salt and pepper.
Grill on HIGH, uncovered, for 3-4 minutes per side. Remove from the
grill, tent with foil and allow to stand 6-8 minutes. Thinly slice against
the grain and serve.
Prime Rib Roast or Rib-eye Roast
(See rotisserie section.)
Skirt and Flank Steak
Marinate steak for at least 30 minutes prior to
grilling. Skirt and flank steaks are best cooked
to medium-rare. If cooked longer the meat
will get dry and tough.
Sear all sides 3 minutes each on HIGH. Continue cooking using indirect
heat (turn one burner OFF and reduce heat to MEDIUM/HIGH on
second burner), covered, for 30-35 minutes or until desired doneness.
Tenderloin Roast (2 pounds
Rub with oil, follow with a generous amount of
spice rub or salt and pepper. Place roast where
burner is turned off near the center of grill.
Cover. Remove from grill and allow to stand
8-10 minutes.
Grill on HIGH, uncovered, for 5-7 minutes per side. Sear 2 minutes,
rotate 90°, cook an additional 3-5 minutes. Turn. Repeat on second side.
Allow to stand 2-3 minutes before serving. For thick (2-inch) steaks
increase cooking time 2-3 minutes per side.
BEEF
Steak Rib-eye Filet Porterhouse/T-Bone 1-inch thick
Rub generously with spice rub or salt and pepper.
